Cooper’s Birth Story

I wrote this back in 2019 when I had Cooper and was still recovering both physically and mentally. For those who don’t know, I had a traumatic birth experience with Cooper due to severe preeclampsia, anesthesia complications, etc. If you ever find yourself in the same situation, please reach out and I’m happy to chat about my experience. Shrimp Boil Packets

-1 lb shrimp, peeled and deveined
-andouille sausage, cut into two inch pieces
-yellow or sweet onion, sliced thinly
-baby potatoes, halved
-corn, cut into small rounds
-4 tbsp butter, melted
-3 tbsp old bay seasoning
-1 tbsp minced garlic
-1 lemon


  1. Heat oven to 400.
  2. Boil a large pot of water with some salt. Add potatoes and corn. Reduce to simmer. Cook 10 min. Drain.
  3. In a large bowl add potatoes, corn, shrimp, sausage, garlic, onion, old bay seasoning, butter, and lemon juice. Toss to combine.
  4. Divide mixture onto large squares of foil. Fold foil into packets. Add to baking tray. Bake 15 minutes.

Healthier Orange Chicken

-chicken breasts or tenders, cut into bite sizes
-1 cup orange marmalade
-1/3 cup bbq sauce
-1 tsp minced garlic
-1 1/2 cups chicken broth
-juice of half an orange
-3 tbsp soy sauce
-2-3 orange slices
-1/2 tsp ground ginger
-1/2 tsp onion powder
-salt and pepper
-1 tbsp cornstarch (mix with a couple drops of water in a small bowl to create a slurry)


  1. In a pot over medium heat, add all ingredients except for chicken and cornstarch. Bring to a boil. Simmer 15 min. After 15 min, whisk in cornstarch.
  2. In a separate pan over medium high, add some olive oil. Season chicken with salt and pepper. Add to skillet and cook 10-12 min or until chicken is done.
  3. Once sauce is cooked and thickened, add to pan with chicken.
  4. Serve with rice and veggies.

Crockpot French Dip Sandwiches

-chuck roast
-4 cups beef broth
-1 packet onion soup mix
-1 packet au jus gravy mix
-provolone
-hoagies


  1. Place chuck roast in crockpot. Season with salt and pepper.
  2. In a large measuring cup or bowl, mix beef broth, onion soup mix and au jus gravy packet.
  3. Pour over chuck roast. Cook on low 8-10 hrs or high 5-7 hrs.
  4. Remove beef, shred. Place on bun, top with cheese. Broil in oven 2-3 min until cheese is melted.
  5. Serve with au jus from crockpot.

Welcome! My name is Lauren Toppe Thomas. I have lived in The Woodlands, Tx for over 20 years. I have been married to my husband, Isaac, since 2016. We have two beautiful babies. My son, Cooper, is 4 and daughter, Collins is 1.

Cooper was conceived through IVF and Collins is our miracle baby! I am a huge advocate for fertility education and treatment.

I attended Texas A&M University, Gig ‘Em! And graduated in 2013. I work full time in Medical Device Sales.

My greatest passion is food! I love cooking, exploring new restaurants in Houston, and trying lots of different cuisines. I went alcohol free in October of 2023 and have found a new passion for discovering and sharing non alcoholic beverage alternatives and mocktail recipes.
