-1 lb shrimp, peeled and deveined
-andouille sausage, cut into two inch pieces
-yellow or sweet onion, sliced thinly
-baby potatoes, halved
-corn, cut into small rounds
-4 tbsp butter, melted
-3 tbsp old bay seasoning
-1 tbsp minced garlic
-1 lemon
- Heat oven to 400.
- Boil a large pot of water with some salt. Add potatoes and corn. Reduce to simmer. Cook 10 min. Drain.
- In a large bowl add potatoes, corn, shrimp, sausage, garlic, onion, old bay seasoning, butter, and lemon juice. Toss to combine.
- Divide mixture onto large squares of foil. Fold foil into packets. Add to baking tray. Bake 15 minutes.
