-chicken breasts or tenders, cut into bite sizes
-1 cup orange marmalade
-1/3 cup bbq sauce
-1 tsp minced garlic
-1 1/2 cups chicken broth
-juice of half an orange
-3 tbsp soy sauce
-2-3 orange slices
-1/2 tsp ground ginger
-1/2 tsp onion powder
-salt and pepper
-1 tbsp cornstarch (mix with a couple drops of water in a small bowl to create a slurry)
- In a pot over medium heat, add all ingredients except for chicken and cornstarch. Bring to a boil. Simmer 15 min. After 15 min, whisk in cornstarch.
- In a separate pan over medium high, add some olive oil. Season chicken with salt and pepper. Add to skillet and cook 10-12 min or until chicken is done.
- Once sauce is cooked and thickened, add to pan with chicken.
- Serve with rice and veggies.

How much chicken? We have five kids, so I usually always double recipes and don’t want to have too high of a chicken-to-sauce ratio. This looks amazing!!

Hi! I use one pound and it makes enough to feed 3 to 4 in my opinion. I think doubling the recipe would work perfectly fine!
