Summer Shrimp Rolls
Ingredients
- 1 lb shrimp peeled and deveined
- buns or rolls of choice
Sauce
- 1/2 cup mayo
- 3 stalks celery diced
- 3 green onions chopped
- 4 tbsp fresh dill chopped
- 3 tbsp fresh chives chopped
- 4 tbsp fresh parsley chopped
- 1 tbsp dijon mustard
- 1/2 tbsp minced garlic
- 1/2 tsp onion powder
- salt and pepper
Instructions
- Bring a large pot of water to a boil with some salt.
- Add shrimp and cook approx 4-5 min or until pink.
- Strain and place shrimp in an ice bath to cool.
- Once cold, chop.
- Meanwhile, combine all sauce ingredients.
- Add shrimp to a large bowl and pour over sauce. Mix to combine.
- Butter and toast buns. Fill with shrimp mixture.
- Garnish with additional chives, dill, and a lemon wedge.
