Summer Shrimp Rolls

Ingredients  

  • 1 lb shrimp peeled and deveined
  • buns or rolls of choice

Sauce

  • 1/2 cup mayo
  • 3 stalks celery diced
  • 3 green onions chopped
  • 4 tbsp fresh dill chopped
  • 3 tbsp fresh chives chopped
  • 4 tbsp fresh parsley chopped
  • 1 tbsp dijon mustard
  • 1/2 tbsp minced garlic
  • 1/2 tsp onion powder
  • salt and pepper

Instructions 

  • Bring a large pot of water to a boil with some salt.
  • Add shrimp and cook approx 4-5 min or until pink.
  • Strain and place shrimp in an ice bath to cool.
  • Once cold, chop.
  • Meanwhile, combine all sauce ingredients.
  • Add shrimp to a large bowl and pour over sauce. Mix to combine.
  • Butter and toast buns. Fill with shrimp mixture.
  • Garnish with additional chives, dill, and a lemon wedge.
