Bring a large pot of water to a boil with some salt.
Add shrimp and cook approx 4-5 min or until pink.
Strain and place shrimp in an ice bath to cool.
Once cold, chop.
Meanwhile, combine all sauce ingredients.
Add shrimp to a large bowl and pour over sauce. Mix to combine.
Butter and toast buns. Fill with shrimp mixture.
Garnish with additional chives, dill, and a lemon wedge.
