Spring Greens Pasta
Ingredients
- pasta of your choice cooked according to package instructions
- asparagus cut into 2-3 inch pieces
- 1/2 cup frozen peas
- snap peas cut into bite sized pieces
- 1/2 tbsp minced garlic
- 1 shallot thinly sliced
- garlic and fine herb boursin
- shredded parmesane
- parsley chopped
- chives chopped
- juice and zest of one lemon
Instructions
- In a large pan over medium high heat, add a drizzle of olive oil.
- Add garlic, shallots, asparagus, snap peas and frozen peas. Season with salt and pepper.
- Cook 5-7 minutes.
- Meanwhile, cook pasta of your choice according to package instructions. Reserve 3/4 cup pasta water.
- Add zest and lemon juice to tenderized veggies.
- Place boursin cheese in the middle and use a spoon or spatula to break apart.
- Pour in pasta water and stiru to incorporate.
- Add in cooked pasta.
