Peach Corn Salad with Air Fryer Chicken Thighs

Ingredients
Peach Corn Salad
- 4 large ears of corn kernels cut off
- 2 peaches sliced
- 1 jalapeno minced
- cilantro finely chopped
- 1/2 red onion finely diced
- 3 tbsp lime juice
- 2 tbsp honey
- 1 tbsp olive oil
- salt and pepper
Chicken Thighs
- 1 lb chicken thighs
Chicken Seasoning
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp paprika
- olive oil drizzle
Instructions
Chicken Thighs
- Combine seasonings into a small bowl. Drizzle olive oil on chicken thighs. Rub seasoning onto chicken thighs.
- Air fry chicken at 380 for 10 min. Flip and air fry additional 10 min.
Peach Corn Salad
- Combine all ingredients in large bowl.
Assembly
- Serve chicken thighs on top of peach corn salad with sliced avocado and fresh limes.
