Herby O’s Carbonara with Prosciutto and Mozzarella

Ingredients  

  • 3/4 lb pasta of choice cooked according to package instructions and drained
  • 4 eggs whisked
  • 1/4 cup parsley chopped
  • 1/4 cup basil chopped
  • 3 tbsp chives chopped
  • 1/3 cup reserved pasta water
  • 6 tbsp butter melted
  • 1/2 cup parmesan shredded
  • 1.5 cups frozen peas
  • fresh mozzarella or burrata
  • extra basil or parsley for garnish
  • pinch of red pepper flakes

Instructions 

  • Cook pasta according to package instructions.
  • Meanwhile, whisk together eggs, herbs, red pepper flakes and parmesan. Season with salt and pepper.
  • When pasta is finished, strain and either add into large pan or large pot over medium heat.
  • Pour in egg mixture and quickly stir.
  • Add in butter, pasta water and peas.
  • Cook additional 3-5 min.
  • Garnish with mozzarella or burrata, prosciutto and basil.
