Egg Roll In a Bowl
Ingredients
- 2 tbsp olive oil (split in two)
- 1 lb ground chicken
- 2 cups shredded cabbage
- 1 cup matchstick carrots
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp rice wine vinegar
- 2 tbsp hoisin sauce
- 2 tsp chili garlic sauce
- toppings: green onion or chives sliced, sesame seeds or everything but the bagel seasoning
Instructions
- Add 1 tbsp olive oil to a large skillet.
- Add ground chicken and cook through. Remove and set aside in a bowl.
- Add the remaining 1 tbsp of olive oil to same skillet.
- Add cabbage and carrots. Saute 4-5 minutes.
- Add ginger and garlic. Stir to combine.
- Add back cooked chicken, soy sauce, sesame oil, rice wine vinegar, hoisin and chili garlic sauce. Toss.
- Serve with optional toppings (I also love to throw on a fried egg).
