Coconut shrimp with Cilantro Lime Pea Rice

Ingredients  

  • 1 lb shrimp peeled and deveined
  • 2 eggs
  • 1/2 cup flour
  • 1/2 tsp paprika
  • coconut flakes
  • panko breadcrumbs
  • bone broth or chicken broth
  • jasmine rice
  • 1/2 cup frozen peas
  • 1 lime juiced
  • cilantro chopped

Honey Dijon Sauce

  • 4 tbsp butter melted
  • 2 tbsp honey
  • 2 tbsp dijon mustard

Instructions 

  • Cook rice according to package instructions using broth instead of water.
  • In 3 separate bowls, whish eggs in one, add flour, paprika, salt and pepper to a second, add coconut flakes and panko (equal parts) to third.
  • Dip shrimp in flour, egg, then coconut panko mix.
  • Add shrimp to air fryer and air fry at 390 for 5 min.
  • As rice is finishing cooking, add peas cilantro and lime juice.
  • Serve rice, coconut shrimp, avocado and mango with honey dijon sauce drizzled over top.
