Coconut shrimp with Cilantro Lime Pea Rice
Ingredients
- 1 lb shrimp peeled and deveined
- 2 eggs
- 1/2 cup flour
- 1/2 tsp paprika
- coconut flakes
- panko breadcrumbs
- bone broth or chicken broth
- jasmine rice
- 1/2 cup frozen peas
- 1 lime juiced
- cilantro chopped
Honey Dijon Sauce
- 4 tbsp butter melted
- 2 tbsp honey
- 2 tbsp dijon mustard
Instructions
- Cook rice according to package instructions using broth instead of water.
- In 3 separate bowls, whish eggs in one, add flour, paprika, salt and pepper to a second, add coconut flakes and panko (equal parts) to third.
- Dip shrimp in flour, egg, then coconut panko mix.
- Add shrimp to air fryer and air fry at 390 for 5 min.
- As rice is finishing cooking, add peas cilantro and lime juice.
- Serve rice, coconut shrimp, avocado and mango with honey dijon sauce drizzled over top.
