Cook rice according to package instructions using broth instead of water.
In 3 separate bowls, whish eggs in one, add flour, paprika, salt and pepper to a second, add coconut flakes and panko (equal parts) to third.
Dip shrimp in flour, egg, then coconut panko mix.
Add shrimp to air fryer and air fry at 390 for 5 min.
As rice is finishing cooking, add peas cilantro and lime juice.
Serve rice, coconut shrimp, avocado and mango with honey dijon sauce drizzled over top.
