Easy Chicken and Dumplings
Ingredients
- 2 tbsp butter
- 1 cup yellow or sweet onion diced
- 1 cup carrots diced
- 1 cup celery diced
- 1 tbsp minced garlic
- 3 chicken breasts cut into half for quicker cooking
- 1/2 can condensed cream of chicken soup
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp poultry seasoning
- 1 can buttermilk biscuits
Instructions
- Heat a dutch oven or large pot over medium heat.
- Add butter.
- Add minced garlic, onion, celery, and carrots. Cook 5 min.
- Add thyme, poultry seasoning, salt and pepper.
- Add in chicken.
- Pour over chicken broth and add 1/2 can condensed cream of chicken soup. Stir to combine.
- Bring to a boil. Then lower to medium heat, cover, and cook 25 min.
- Uncover, remove chicken, shred, and add chicken back into broth mixture.
- Pull apart or cut biscuits into fourths. Add on top. Cover and cook additional 10 min.
