Butternut Squash Italian Sausage Pasta
Ingredients
- 1 lb italian sausage
- 8 oz pasta of your choice cooked according to package instructions
- 2 cups butternut squash cubed/cut into bite sized pieces (HEB sells in 10 oz bags; I get 2)
- 2 cups spinach
- 1.5 cups heavy cream
- 1/2 cup shredded parmesan plus more for serving
- 1 tbsp minced garlic
- pinch red pepper flakes plus more for serving (optional) also, can remove completely for little ones!
Instructions
- Heat oven to 425 degrees.
- Toss butternut squash in olive oil and season with salt and pepper. Bake 30 minutes.
- Meanwhile, cook italian sausage in a large skillet. Once cooked through. transfer to a bowl lined with a paper towel.
- Put skillet back onto heat. Add a drizzle (approx. 1 tbsp.) olive oil, spinach and minced garlic to pan. Season with salt, pepper and red pepper flakes. Cook 4-5 minutes. Whisk in heavy cream. Bring to a slight boil.
- Turn down to a simmer. Add parmesan and stir.
- When pasta is done, strain and add to pan. Add in cooked italian sausage (note: you could also use ground beef, chicken, turkey).
- Serve topped with roasted butternut squash.
