Heat oven to 425 degrees.
Toss butternut squash in olive oil and season with salt and pepper. Bake 30 minutes.
Meanwhile, cook italian sausage in a large skillet. Once cooked through. transfer to a bowl lined with a paper towel.
Put skillet back onto heat. Add a drizzle (approx. 1 tbsp.) olive oil, spinach and minced garlic to pan. Season with salt, pepper and red pepper flakes. Cook 4-5 minutes. Whisk in heavy cream. Bring to a slight boil.
Turn down to a simmer. Add parmesan and stir.
When pasta is done, strain and add to pan. Add in cooked italian sausage (note: you could also use ground beef, chicken, turkey).
Serve topped with roasted butternut squash.
