Jerk Shrimp with Mango Pineapple Pico

Ingredients  

  • 1 lb shrimp peeled and deveined
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp jerk seasoning
  • 1/2 tbsp minced garlic

Mango Pineapple Pico

  • 1/2 cup mango finely diced
  • 1/2 cup pineapple finely diced
  • 1/3 cup red onion finely diced
  • 1/4 cup cilantro finely chopped
  • 1 jalapeno finely diced
  • 1 tsp honey

Jerk Mayo

  • 3/4 cup mayo
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tbsp jerk seasoning

Instructions 

  • Combine shrimp, soy sauce, lime juice, jerk seasoning, and minced garlic in a bowl. Let marinate 15 minutes. Heat a pan to medium high heat. Add a drizzle of olive oil.
  • Add shrimp to pan and cook approx 3 min each side or until pink throughout.
  • For pico, combine all ingredients.
  • For mayo, combine all ingredients.
  • Assemble bowls. I chose to use jasmine rice as my base. Top with shrimp, pico and jerk mayo. Optional: avocado and lime slices (I love topping my avocado with everything but the bagel seasoning!)
