Combine shrimp, soy sauce, lime juice, jerk seasoning, and minced garlic in a bowl. Let marinate 15 minutes. Heat a pan to medium high heat. Add a drizzle of olive oil.
Add shrimp to pan and cook approx 3 min each side or until pink throughout.
For pico, combine all ingredients.
For mayo, combine all ingredients.
Assemble bowls. I chose to use jasmine rice as my base. Top with shrimp, pico and jerk mayo. Optional: avocado and lime slices (I love topping my avocado with everything but the bagel seasoning!)
