Spring Greens Pasta

Ingredients  

  • pasta of your choice cooked according to package instructions
  • asparagus cut into 2-3 inch pieces
  • 1/2 cup frozen peas
  • snap peas cut into bite sized pieces
  • 1/2 tbsp minced garlic
  • 1 shallot thinly sliced
  • garlic and fine herb boursin
  • shredded parmesane
  • parsley chopped
  • chives chopped
  • juice and zest of one lemon

Instructions 

  • In a large pan over medium high heat, add a drizzle of olive oil.
  • Add garlic, shallots, asparagus, snap peas and frozen peas. Season with salt and pepper.
  • Cook 5-7 minutes.
  • Meanwhile, cook pasta of your choice according to package instructions. Reserve 3/4 cup pasta water.
  • Add zest and lemon juice to tenderized veggies.
  • Place boursin cheese in the middle and use a spoon or spatula to break apart.
  • Pour in pasta water and stiru to incorporate.
  • Add in cooked pasta.
