Beef Enchiladas
Ingredients
- 1 lb ground beef
- 1 small yellow onion diced
- 4 oz can diced green chiles
- 1 can black beans drained and rinsed
- mexican cheese shredded
- enchilada sauce of your choice
- taco seasoning packet
- tortillas
Instructions
- Heat oven to 350.
- Heat skillet to medium high. Brown ground beef.
- Add onion and green chiles, cook 3-4 minutes.
- Add seasoning. Cook 2-3 min.
- Assemble enchiladas by taking a tortilla, adding a spoonful of enchilada sauce, black beans, ground beef mixture and sprinkle of cheese.
- Pour a small amount of enchilada sauce into greased 9×13 baking dish. Roll and place into dish seam side down. Repeat until dish is full.
- Top enchiladas with enchilada sauce and cheese.
- Bake 30 min.
