Beef Enchiladas

Ingredients  

  • 1 lb ground beef
  • 1 small yellow onion diced
  • 4 oz can diced green chiles
  • 1 can black beans drained and rinsed
  • mexican cheese shredded
  • enchilada sauce of your choice
  • taco seasoning packet
  • tortillas

Instructions 

  • Heat oven to 350.
  • Heat skillet to medium high. Brown ground beef.
  • Add onion and green chiles, cook 3-4 minutes.
  • Add seasoning. Cook 2-3 min.
  • Assemble enchiladas by taking a tortilla, adding a spoonful of enchilada sauce, black beans, ground beef mixture and sprinkle of cheese.
  • Pour a small amount of enchilada sauce into greased 9×13 baking dish. Roll and place into dish seam side down. Repeat until dish is full.
  • Top enchiladas with enchilada sauce and cheese.
  • Bake 30 min.
