Herby O’s Carbonara with Prosciutto and Mozzarella
Ingredients
- 3/4 lb pasta of choice cooked according to package instructions and drained
- 4 eggs whisked
- 1/4 cup parsley chopped
- 1/4 cup basil chopped
- 3 tbsp chives chopped
- 1/3 cup reserved pasta water
- 6 tbsp butter melted
- 1/2 cup parmesan shredded
- 1.5 cups frozen peas
- fresh mozzarella or burrata
- extra basil or parsley for garnish
- pinch of red pepper flakes
Instructions
- Cook pasta according to package instructions.
- Meanwhile, whisk together eggs, herbs, red pepper flakes and parmesan. Season with salt and pepper.
- When pasta is finished, strain and either add into large pan or large pot over medium heat.
- Pour in egg mixture and quickly stir.
- Add in butter, pasta water and peas.
- Cook additional 3-5 min.
- Garnish with mozzarella or burrata, prosciutto and basil.
