Crockpot Honey Garlic Chicken Thighs

Ingredients  

  • 1.5 lbs chicken thighs boneless, skinless
  • chives finely chopped for garnish

sauce

  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 1/3 cup ketchup
  • 1 tbsp minced garlic
  • 1 tbsp apple cider vinegar
  • 1 tsp minced ginger
  • 1 pinch red pepper flakes
  • 2 tbsp cornstarch
  • salt and pepper

Instructions 

  • Add chicken thighs to crockpot.
  • In a bowl or measuring cup, add all sauce ingredients excluding cornstarch.
  • Pour sauce over chicken.
  • Cook 6-8 hours on low or 3-5 hours on high.
  • Once cooked, shred.
  • Mix cornstarch with 2 tbsp cold water. Pour into crockpot and stir to combine (this is to thicken the sauce).
  • Garnish with chives.

Notes

I served with steamed carrots, rice and avocado. You could serve it over arugula, with green beans, baked potatoes, roasted squash or even as sandwiches!
