-boneless skinless chicken thighs
-chicken seasoning (I used Montreal)
-about 1/2 cup bbq sauce
-coleslaw cabbage mix
-romaine, chopped
-avocado, diced
-corn (I cook mine on high in a skillet with some butter for 5-6 min to get some nice flavor and char!)
-red onion, thinly sliced
-jalapeño, thinly sliced
-cilantro, chopped
-green onion, chopped
-optional: jalapeño
dressing: 1/2 cup plain greek yogurt, juice of one lemon, 1
tbsp white vinegar, 1/4 cup mayo, 1 tbsp honey, 1/2 tsp
dry mustard
- Season chicken with your choice of seasoning. Drizzle with olive oil. Cook in air fryer 400 for 10 min. Flip, brush with bbq sauce, and cook additional 10 min at 375.
- Assemble salad. Coleslaw, romaine, avocado, green onion, cilantro, red onion, corn, and jalapeño.
- Toss with dressing.
- Add sliced chicken on top.
