Creamy Tomato Basil Noods with Mozzarella Pearls

- 4 tbsp unsalted butter
- 8 oz pasta of choice, cooked according to package instructions
- 1 c. heavy cream
- 3/4 c. shredded parmesan (1/2 c. for pasta, remainder for serving)
- 1 tbsp minced garlic
- 1/4 c. vegetable broth (or chicken!)
- 1 tsp red pepper flakes
- 1 1/2 c. cherry tomatoes, halved
- 2 tbsp fresh basil, chopped
- 1 tsp dried oregano
- optional: mozzarella pearls, fresh parsley for serving
Instructions:
Cook pasta according to package.
Heat a large skillet over medium high. Add butter.
Once melted, add garlic and tomatoes. Season with salt and pepper. Let cook 3-4 min.
Pour in broth. Bring to a simmer. Add red pepper flakes and oregano.
Pour in heavy cream. Bring back to a simmer.
Add in parmesan and basil. Stir all to combine.
Pour in cooked noodles.
Add garnishes/toppings (i.e.) mozzarella pearls, parmesan, parsley, red pepper flakes, olive oil drizzle.
