Crispy Rice Shrimp Bowls with Creamy Sesame Dressing
- 3/4 lb shrimp, peeled and deveined
- 1 tbsp minced garlic
- juice of 1 lemon
- salt and pepper
- pinch of red pepper flakes
- ‘salad’ ingredients: cucumbers (chopped however you like), micro greens or arugula, green onion (chopped), 1/4 cup chopped parsley, red onion (finely diced), avocado (sliced), wonton strips (optional), sliced limes for serving
- crispy rice (2 cups white rice, 1 tbsp soy sauce)
- dressing (1/2 cup mayo, 1 tsp sesame seeds, 2 tsp sesame oil, 2 tbsp rice vinegar, 4 tsp honey, 1 tbsp soy sauce)
Instructions:
Crispy Rice: add rice to pan lined with parchment paper. Drizzle over soy sauce. Cook for 30 min at 400.
Shrimp:
Heat pan over medium high. Add drizzle of olive oil. add garlic.
Cook shrimp 2-3 min each side or until pink. Add salt, pepper, lemon juice and red pepper flakes.
For salad, combine all ingredients.
For dressing, combine all ingredients.
Serve salad topped with shrimp, crispy rice and dressing.
