Green Goddess Chicken Salad
- 1 rotisserie chicken, meat removed
- 1/4 cup mayo
- 1/2 cup plain greek yogurt
- Zest and juice of 1 lemon
- 1 avocado
- 2 tbsp chopped green onions
- 2 tbsp fresh basil
- 2 tbsp fresh dill
- 1/4 cup chopped parsley
- 2 tbsp minced garlic
- 1/2 red onion, finely diced
- Add all ingredients aside from chicken and onion to a food processor or blender. Blend until smooth.
- Chop or shred chicken. Pour over dressing. Add red onion and mix to combine.
- Serve with crackers, on a croissant, or as a sandwich!
