Green Goddess Chicken Salad

  • 1 rotisserie chicken, meat removed
  • 1/4 cup mayo
  • 1/2 cup plain greek yogurt
  • Zest and juice of 1 lemon
  • 1 avocado
  • 2 tbsp chopped green onions
  • 2 tbsp fresh basil
  • 2 tbsp fresh dill
  • 1/4 cup chopped parsley
  • 2 tbsp minced garlic
  • 1/2 red onion, finely diced
  1. Add all ingredients aside from chicken and onion to a food processor or blender. Blend until smooth.
  2. Chop or shred chicken. Pour over dressing. Add red onion and mix to combine.
  3. Serve with crackers, on a croissant, or as a sandwich!
