- 1.5 lbs boneless skinless chicken thighs
- 1.5 cups chicken bone broth (or regular chicken broth)
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tbsp minced garlic
- 1/2 cup orange juice
- fresh thyme sprigs
- 2 shallots
- 1 sliced navel orange
- red pepper flakes
- 1/2 tbsp cumin seeds
- Preheat oven to 375 degrees.
- Add olive oil to oven safe pan over medium heat.
- Add chicken thighs (seasoned with salt and pepper) and brown both sides 2-3 minutes. Remove to plate and set aside. Drain excess grease.
- Add cumin seeds and toast 2-3 minutes. Add butter and garlic. Cook 1-2 minutes.
- Add in bone broth and orange juice.
- Bring to a simmer. Add back in chicken thighs. Place orange slices, shallots, and thyme around chicken. Pinch of red pepper flakes.
- Bake 60 minutes covered. Uncover and bake additional 15 minutes.
