-2 to 3 lb chuck roast
-1/2 yellow onion
-1/2 cup beef broth
-1 tbsp apple cider vinegar
-2 bay leaves
-1 tbsp chili powder
-1/2 tbsp minced garlic
-1 tsp onion powder
-1 tsp cumin
-1 tsp paprika
-1 tsp pepper
-1/2 tbsp salt
-2 tbsp lime juice
-1 tsp oregano
Toppings: diced white onion, lime juice, cilantro, hot sauce
- Chop roast into chunks. Put into crockpot. Add onion.
- Season with all seasonings.
- Add beef broth and apple cider vinegar.
- Add bay leaves.
- Cook on low 8 hrs.
- Remove and shred.
