-chicken breasts, cut thin
-1/2 cup flour
-2 eggs, beaten
-1/2 cup italian or garlic herb breadcrumbs
-1/2 cup parmesan
-24 oz marinara sauce
-1 cup mozzarella
-pasta of your choice
- Heat oven to 425.
- Put flour on a plate and season with salt and pepper.
- Whisk eggs in wide bowl.
- Add breadcrumbs and parmesan to a second bowl.
- Coat chicken in flour, then egg mix, then breadcrumb parmesan. Repeat with remaining chicken breasts. Set chicken aside on a plate.
- Heat a large skillet over medium high heat. Add a drizzle of olive oil. Add chicken and brown 2 to 3 minutes each side.
- In a baking dish, add about half cup marinara. Add chicken breast. Top with additional marinara. Top with shredded mozzarella.
- Bake for 15 minutes. Serve with pasta of your choice.
