-1.5 lb chicken breasts
-2 shallots, chopped
-1/2 cup chopped celery
-3/4 cup chopped carrots
-1 cup wild and brown rice mix (or one of them alone!)
-1 tsp dried thyme
-1 tsp dried sage
-6 cups chicken broth
-juice of one lemon
-1 tsp minced garlic
-pinch of red pepper flakes
-1/2 cup grated parm
-optional: roast mushrooms on a pan for 25 min at 425 with some olive oil, salt, pepper, garlic and rosemary
- In a crockpot, add chicken, shallots, celery, carrots, rice, chicken broth, sage, thyme, lemon juice, garlic, and red pepper flakes. Season with salt and pepper.
- Cook on high 3-4 hours or low 5-6 hrs.
- Remove chicken and shred. Add back to crockpot. Stir in parmesan.
- Optional: top with roasted mushrooms.
