-flank steak
MARINADE
-2/3 cup olive oil
-1/2 cup orange juice
-1/3 cup lime juice
-1/4 cup soy sauce
-3 tbsp worcestershire
-3 tbsp apple cider vinegar
-1 tbsp minced garlic
-a couple dashes of liquid smoke
CHIMICHURRI SAUCE
-1/2 yellow onion, diced
-1 cup parsley
-1 cup cilantro
-1/4 cup olive oil
-1/2 tbsp garlic
-3 tbsp lime juice
-3 tbsp red wine vinegar
-salt, pepper and a pinch of red pepper flakes
- Combine all marinade ingredients. Season steak with salt. Add steak to marinade in a large ziploc bag or dish. Marinate 4+ hrs.
- Combine all sauce ingredients in food processor.
- When ready to cook steak, heat a skillet/cast iron skillet over medium high heat. Add 3 tbsp butter.
- Sear steak 4-5 min each side. Remove steak and let rest 10 min before slicing to serve.
