-2 tbsp butter
-1 shallot, finely diced
-cremini or baby bella mushrooms, sliced
-1/2 tbsp minced garlic
-1 1/2 cup orzo
-1 1/2 cups chicken stock
-1/2 cup heavy cream or whole milk
-1/3 cup parmesan
-1 tbsp parsley, finely chopped
-salt and pepper
- Melt butter in a large pot over medium high.
- Add shallot, mushrooms, garlic, salt and pepper. Cook until softened. About 4-5 min. Add orzo. Stir 1-2 min.
- Pour in stock and cream. Stir to combine. Sprinkle in parsley. Bring to a simmer, then turn heat to low. Cook 8-10 min or until most liquid is absorbed.
- Stir in parmesan.
