Shrimp Salsa


-1 pound shrimp, cooked and chopped
-1 large avocado, finely diced
-1 red onion, finely diced
-1 jalapeño, seeded and finely diced
-1/3 cup cilantro, finely chopped
-2 to 3 baby persian cucumbers, finely diced
-4 to 5 roma tomatoes, finely diced
-1 tbsp minced garlic
-juice of one lime
-3 tbsp olive oil
-salt and pepper


  1. Bring a large pot of water with a pinch of salt to a boil. Boil shrimp 2-3 min. Chop shrimp.
  2. Combine all ingredients.
  3. Serve with yellow corn chips.

    The key is to chop all of your ingredients very small so that you get
    as much bang as possible in each bite!
