-1 lb skinless boneless chicken thighs
-4 tbsp olive oil
-1/3 cup cilantro, chopped
-1/2 tbsp minced garlic
-zest and juice of one lemon
-1.5 tsp cumin
-1.5 tsp chili powder
-1/2 tsp paprika
-1/4 tsp red chili flakes
-salt and pepper
-1 tsp chicken bouillon
- Mix all ingredients in a large bowl or ziploc bag. Cover in fridge and let marinate for at least 2 hrs.
- Spray air fryer with oil. Place chicken thighs in air fryer.
- Cook for 10 min at 400. Flip, and cook an additional 8 min.
For Asparagus:
-asparagus, ends trimmed
-2 tbsp olive oil
-3 to 4 tbsp panko breadcrumbs
-1 tsp garlic powder
-salt and pepper
-1/8 cup grated parmesan
- Preheat oven to 425. Line baking sheet with parchment paper.
- Toss asparagus with olive oil, breadcrumbs, salt, pepper, and garlic powder.
- Place in oven for 10 min.
- Remove and add parmesan.
- Place back in oven for additional 7-8 min.
